主要從事生物高分子化合物、發酵食品和生物活性物質方面的研究。作為項目負責人主持上海市科委“科技創新行動計劃”項目、上海市地方高校能力建設項目、山東省自然科學基金、上海市博士后基金項目等省部級項目16項,企業委托項目11項。在SCI/SSCI/EI/CSCD/CSSCI學術期刊上發表論文共111篇,出版專著(譯著等)5部。
